You should, by now, have noticed little green dots floating around the Trainer. These are Herbal "Nodes".
Approach a Node, the action to harvest the herbs should pop up. Press X (It'll be Z later, but the first, training herbs get pushed to X.) to harvest the herb.
The Node will vanish, and you can right click or double click on the herb to put it in your (B)ag.
Harvested herbs go into your "Reagents" tab of your (B)ag. This gives you 18 free slots to hold different qualities of herbs.
Once you harvest enough of the herb behind the Herbalism Trainer to meet the quest requirement, talk to the Herbalism Trainer again.
Complete the quest.
Accept the new training quest.
Go to where the quest text described and look for the floating green dots that get harvested with X, not Z. These will be the two you are looking for.

Complete the quest.
Accept the third and final training quest.

You should now have Herbalism skill over 60, and can now wander the world looking for the floating green dots that are harvested with Z. The closer to your starting city you are, the easier the herbs will be to harvest. The nodes are actually "clusters" of the same herb, so once you harvest one node, the whole cluster of green dots will vanish. (You'll likely get more than one of the herb, you see.) The clusters take ages to respawn and/or move around, basically you have to keep moving. You need to keep harvesting herbs appropriate for your level to improve your skill. Note that you cannot have more than 10 times your level in Herbalism Skill. (Need to be level 7 to get to level 70 herbalism, for example.) Also note that it's not always logical in progression of where to go next, and sometimes you may end up harvesting 10 or more of a lesser herb to get the next level of skill. More than that and you should probably try to find another spot to harvest.
The herbs harvested vary based on your location. Generally speaking for whatever area you're haunting, you'll have 20 different herbs (5 different herbs of 4 varying qualities) you can harvest. Yes, this is more than you can actually carry. So sell your stacks of herbs or mail them to your Alchemist friend/guildmate often.
...I think that's all of it, but I probably forgot a bunch of stuff.
